Set the roast on the counter for 3 hours - room temperature
1 1/2 T thyme
1 1/2 T sage
2 t salt
2 t pepper
Coat the whole roast after it’s room temperature.
Put in a pan on a rack (fat side up) cover with foil
Add a cup of water to the bottom of the pan.
Cook at 350 for about 1 1/2 hours until the inside is 145. Then let it rest for 20 minutes covered on the counter.
Check the temp after an hour to be sure you don’t overcook it.
