Pesto

1 1/2 cups Extra Virgin Olive Oil
20 basil leaves
handful of spinach or parsley
4 cloves of garlic
3 T walnuts
2 T Parmesan
salt to taste about 1 t

We use an immersion blender and a mason jar but any blender/mixer will work.
Blend everything together and adjust the seasoning to your taste. You can add all or part of
a JalapeƱo to make it hot if you like. Or the Holy Oil (Habanero) as the Italians call it, if you want
it really hot.
