Rubbed & Roasted Turkey Breast

I love turkey not just for Thanksgiving but any time of year. I usually grill it with some hickory chips in my smoker box, but this time I did roast it in the oven. This recipe goes well with the "Oven Roasted Sweet Potato Hash" that I have also posted.

1 turkey breast thawed about 5-6 lbs.
fresh herbs-thyme, rosemary-whatever you like
1 lemon cut in half
3 green onions
fresh garlic cloves
Rubbed & ready for a roasting....

Rub
¼ c. paprika
1T. brown sugar packed
1 T. sugar
2 t. kosher salt
1 t. celery salt
1 t. ground black pepper
1 t. cayenne pepper
1 t. dry mustard
1t. garlic powder
1 t. onion powder
1t. cumin
Put a fork in it-it's a done bird!

Mix it all up. Store it in a jar. You won’t
use it all for the turkey but it is really
good for ribs too!


For the turkey-loosen the skin carefully,. Lift up the skin & sprinkle a couple of spoons of the rub underneath and some fresh herbs too if you have them. I used thyme and rosemary. Slice up some garlic & tuck under the skin too. Flatten the skin down with your hand. Take some olive oil & rub all over the inside and then apply the rub to the top skin as well. and the Stuff the cavity with more garlic, the lemons(squeeze a bit) and green onions.  Place the turkey breast on an oiled rack & either grill (my first choice) or roast in the oven at 375 for about 20 minutes a pound. After it’s done let it rest for about 10-15 min before slicing.
The first slice-the skin was perfect and the meat was tender & juicy!
