Kamodo Joe smoking a pork shoulder 7 lbs

Started our  Kamado Joe at 600am
Used Alton Browns rib rub and put mustard on the meat for the rub to stick
took 50 minutes to reach 225. You can find the rub here:Once of the best rubs
Its pretty easy to maintain a smoking temperature, a slight turn here and there
to the daisy wheel in the 1st hour kept our temp between 225 and 240.
We kept the meat moist by spraying it with Apple cider vinegar. Don't spray until you are
about 5 hours in and then maybe every 90 minutes.
You'll want the internal temperature to be 200 for pork. So once we hit 200 we double wrapped in foil and let still for another hour.
Well worth the whole day of monitoring this but now we see how easy it is, next time we'll just put the meat on the smoker and let it cook all night!
